Description

Stone-ground yellow corn flour — makki atta, for makki ki roti and cornbread.

Coarser and sweeter than wheat flour, and it holds no gluten, so a makki roti is patted out by hand rather than rolled. Also used for thickening, for crisp coatings and mixed with atta in winter breads.
