Rasam podi, 200 g. Sharp, peppery and built for tamarind.

Rasam lives or dies on its podi. Ours is heavy on pepper and cumin, with just enough coriander to carry them. Stir into tamarind water, bring barely to a simmer, and take it off before it boils.
